Really fancied Nandos – so improvised!
Seemed a shame to waste the leftovers, so freshened it up with a crunchy cucumber salad and rice wine vinegar dressing.
Just the thing for an unexpectedly chilly Spring evening….
An oldie, but a goodie. Plus, gives me extra pesto for use later in the week to tart up an otherwise boring side of green veggies 🙂
